Take a bite of freshly baked mooncakes at PKU

Peking University, September 8, 2022: PKU mooncakes have accompanied PKUers for 36 years. The making of this traditional Chinese delicacy consumed during the Mid-Autumn Festival requires elaborate efforts and professional expertise. Shi Yufu, one of the bakers at Peking University who have made mooncakes for the sixth year, said that the most important part of the handmade mooncake production is the baking process. “If the temperature or the time set for baking is improper, then all the previous efforts will be in vain.”
This year, on the basis of eight original stuffings, the university dining center has created four new fillings. From egg custard mooncake with black truffle to mooncake with salted egg yolk and dried meat floss—old recipes combining with new fillings will add additional flavor to the traditional Chinese festival and serve as an exquisite and ingenious gift to friends and family members.

1.奶黄黑松露 Egg Custard Mooncake with Black Truffle
This kind of Cantonese-style Mooncake has golden crust with soft egg custard inside. Featuring a brilliant truffle aroma, the specialty is an interesting combination of flavors.
2.绿豆蓉无花果 Mooncake with Fig and Green Bean Paste
The flavors of fig and green bean paste are combined with perfect balance. It tastes smooth, creamy, and mildly sweet.
3. 酒香樱桃 Red Wine Cherry Paste Mooncake
The sweetness of cherries and the rich aroma of red wine form a harmonious and delicious blend. The filling of this mooncake tastes soft and mellow.
4. 奶黄香柚 Mooncake with Egg Custard and Pomelo
The golden crust which is sweet and crumbly decorates the autumn scenery. The refreshing taste of pomelo accompanied by sweet egg custard can’t be missed by fruit flavor lovers!
5. 五仁 Mooncake with Five Kernels (Wuren Mooncake)
This traditional mooncake includes five kinds of coarsely chopped nuts and seeds. (anything from almonds, peanuts, walnuts, etc.) The taste of the rich, chewy but crunchy texture lives in people’s childhood memories, winning a large group of consumers.
6.枣泥 Chinese Date Paste Mooncake
The thin pastry shell of the mooncake is dense but soft. With conventional Chinese date paste inside, the sweetness of the mooncake is pleasurable.
7. 红豆沙 Red Bean Mooncake
As one of the most classical kind of Cantonese-style Mooncakes, the Red Bean Mooncake is filled with a very dense red bean paste. The sweetness will explode with one bite of the mooncake.
8. 榛仁巧克力 Chocolate Hazelnut Mooncake
Featuring a strong chocolate flavor with a mixture of hazelnuts, the filling of Chocolate Hazelnut Mooncake satisfies a lot of dessert lovers!
9. 红酒蔓越莓 Red Wine Cranberry Paste Mooncake
The unique flavor combining sweetness and sourness with the rich aroma of the Red Wine Cranberry Paste is appetizing and delicious.
10. 紫薯蛋黄 Mooncake with Salted Egg Yolk and Yam
The filling of the mooncake includes smooth and creamy purple yam and a golden egg yolk. It's an acquired taste, quite savory and salty. Delicious and colorful, this cuisine is both taste and visual enjoyment.
11. 抹茶松仁蜜豆 Matcha Mooncake with Red Bean and Pine Nuts
The bright, vegetal, and slightly bitter taste of matcha is accompanied by sweet red beans and crunchy pine nuts, making the flavor of the mooncake fresh.
12. 蛋黄肉松 Mooncake with Salted Egg Yolk and Dried Meat Floss
The filling is made of creamy salted egg yolk and dried meat floss paste. The salty taste caters to people who prefer savory food.
